  • 1 pint blueberries
  • 1/2 cup sliced almonds
  • 1/4 cup fresh mint
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Rinse cucumbers under cold water, then slice into bite-sized pieces. Place in a large mixing bowl.
  2. Add rinsed blueberries to the bowl.
  3. If using raw almonds, toast them in a dry skillet over medium heat until golden brown. Once cooled, add to the bowl.
