  • 2 tablespoons olive oil
  • 5 ounces frozen chopped spinach (thawed and drained)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup ricotta cheese
  • 2 tablespoons chopped green onions
  • 2 minced garlic cloves
  • 1/2 teaspoon dried dill

Instructions

  1. Preheat the oven to 375°F (190°C). Pat chicken breasts dry and season both sides with paprika, oregano, garlic powder, onion powder, salt, and black pepper.
  2. In a skillet over medium heat, heat olive oil and sauté minced garlic until fragrant. Add thawed spinach and cook until moisture evaporates. Transfer to a bowl; mix in feta, ricotta, green onions, and dill.
  3. Create pockets in each chicken breast by slicing horizontally without cutting through completely. Stuff with the spinach mixture.
  4. Heat more olive oil in the skillet over medium-high heat; sear stuffed chicken breasts for about 4-5 minutes on each side until golden brown.
  5. Transfer the skillet to the oven and bake for an additional 15-20 minutes or until the internal temperature reaches 165°F (75°C). Let rest before slicing.
