Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 pound spaghetti
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup chicken broth
  • 8 ounces cream cheese, softened
  • 2 cups shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook spaghetti in salted boiling water until al dente; drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken seasoned with Cajun seasoning and smoked paprika. Cook until browned and cooked through (about 6–8 minutes). Remove from skillet.
  3. In the same skillet, melt butter over medium heat. Whisk in flour to create a roux; cook for about 1–2 minutes.
  4. Gradually whisk in milk and chicken broth; bring to a gentle simmer, stirring continuously until thickened (about 5 minutes).
  5. Stir in cream cheese and 1 cup shredded mozzarella until melted and smooth.
  6. Return cooked chicken to the skillet; mix well.
  7. Toss cooked spaghetti into the sauce until evenly coated.
  8. Top with remaining mozzarella cheese, cover, and let melt for about 2–3 minutes before serving.
