  • 1/4 cup kosher salt
  • 2 tbsp brown sugar
  • 2 cloves garlic, smashed
  • 2 tbsp olive oil
  • 1 tsp salt (for seasoning)
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper (optional)

Instructions

  1. In a large mixing bowl or pot, combine warm water, kosher salt, brown sugar, and smashed garlic cloves. Stir until dissolved.
  2. Submerge the chicken in the brine, cover, and let it soak for 30 minutes.
  3. Preheat your grill to medium-high heat (375°F–450°F) and oil the grates to prevent sticking.
  4. Remove chicken from brine, pat dry with paper towels, and rub with olive oil and seasonings (salt, black pepper, garlic powder, paprika, oregano, and cayenne).
