Ingredients

Scale
  • 1 small head green cabbage
  • 5 tablespoons olive oil (divided)
  • Salt and pepper (to taste)
  • 1 tablespoon rice vinegar
  • 1½ teaspoons low sodium soy sauce
  • 1 teaspoon Dijon mustard
  • 1 large clove garlic (minced)
  • 2 tablespoons freshly grated Parmesan (or nutritional yeast for a vegan option)
  • 3 tablespoons chopped chives

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cut the cabbage into one-inch wedges and place on an extra-large baking sheet. Drizzle with 2 tablespoons of olive oil, season with salt and pepper, and toss until evenly coated.
  3. Roast in the preheated oven for 20-25 minutes, flipping halfway through for even caramelization.
  4. Meanwhile, whisk together the remaining olive oil, rice vinegar, low sodium soy sauce, Dijon mustard, minced garlic, and season with salt and pepper to taste.
  5. Once cabbage is roasted, transfer to a bowl and drizzle with dressing while still warm. Toss gently to combine.
  6. Sprinkle with grated Parmesan cheese (or nutritional yeast) and chopped chives before serving.
