  • 1 1/4 cups sugar
  • 1 3/4 cups eggnog
  • 2 eggs, beaten
  • 1/2 cup butter, melted
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract (alcohol-free)
  • 1 package (3.4 oz) instant French vanilla pudding mix
  • Powdered sugar for glazing

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, sift together flour, baking powder, salt, and nutmeg.
  3. In another bowl, whisk eggs until frothy; add sugar, melted butter, eggnog, and vanilla extract. Mix until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Stir in the instant pudding mix until fully incorporated.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55–60 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool for about 10 minutes before removing from the pan.
  9. For the glaze, whisk together powdered sugar and enough eggnog to achieve desired consistency; drizzle over cooled bread.
