  • 1 lb smoked beef sausage, sliced
  • 1/2 cup diced onion
  • 1/2 cup diced red bell pepper
  • 3 cloves garlic, minced
  • 1 cup jasmine rice
  • 2 cups chicken stock
  • 1 1/2 cups grated zucchini
  • 1 cup shredded white cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add sliced sausage and sauté until browned (about 5 minutes).
  3. Stir in diced onion, red bell pepper, and garlic; cook until softened (4–5 minutes).
  4. Add jasmine rice and stir to coat. Pour in chicken stock and bring to a simmer. Cover and cook for 18–20 minutes until rice absorbs liquid.
  5. Fold in grated zucchini, salt, and pepper.
  6. Transfer half of the mixture into a greased baking dish, sprinkle with half of each cheese. Layer remaining mixture on top and add the rest of the cheese.
  7. Cover loosely with foil and bake for 20 minutes; remove foil to bake for an additional 5 minutes until golden brown.
