  • 3 cups small bite-sized cauliflower florets
  • 1 1/2 cups sliced carrots
  • 1 1/2 cups sliced celery
  • 1 1/2 cups sliced red bell pepper
  • 1 cup pitted green olives
  • 4 tablespoons olive oil
  • 4 cloves garlic, halved
  • 2 Serrano chile peppers, halved
  • 3 cups water
  • 3 cups white grape juice vinegar
  • 2 tablespoons salt
  • 2 tablespoons granulated sugar

Instructions

  1. Prepare vegetables: Wash and chop cauliflower, carrots, celery, and bell pepper into bite-sized pieces. Set aside.
  2. Create brine: In a medium saucepan over high heat, combine water, white grape juice vinegar, salt, and sugar. Bring to a boil while stirring until dissolved.
  3. Layer ingredients: Place prepared vegetables, olives, garlic cloves, and chiles into clean pint jars.
  4. Add brine: Carefully pour the boiling brine over the layered ingredients in each jar until nearly full. Seal loosely until cooled.
  5. Chill: Allow jars to cool at room temperature for about an hour before sealing tightly and refrigerating for at least 36 hours before enjoying.
