  • 3 cups shredded rotisserie chicken
  • 1½ cups diced cucumber
  • 1½ cups chopped grape tomatoes
  • ½ cup diced red onion
  • 1 cup plain Greek yogurt
  • Juice of 1 lemon
  • 2 cloves minced garlic
  • 23 tbsp fresh dill (divided)
  • Salt and pepper (to taste)

Instructions

  1. Shred the rotisserie chicken into bite-sized pieces and place in a large mixing bowl.
  2. Dice the cucumber, chop the grape tomatoes, and finely dice the red onion. Add these vegetables to the bowl with the chicken.
  3. In a small mixing bowl, combine Greek yogurt, lemon juice, minced garlic, salt, pepper, and 2 tablespoons of fresh dill. Mix until smooth.
  4. Pour the dressing over the chicken and vegetable mixture. Gently fold everything together until well coated.
  5. Chill in the refrigerator for at least 30 minutes to allow flavors to meld before serving.
