  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 4 slices fresh mozzarella cheese
  • 4 slices ripe tomato
  • 2 tablespoons sliced fresh basil
  • 1/2 cup balsamic vinegar
  • 2 tablespoons light brown sugar

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season chicken breasts with Italian seasoning, garlic powder, onion powder, salt, and pepper.
  3. Lightly spray grill grates with non-stick cooking spray and place chicken on the grill.
  4. Grill for 6-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F).
  5. In the last few minutes of cooking, top each chicken breast with mozzarella cheese and close the grill lid to melt.
  6. Remove chicken from the grill and layer with tomato slices and fresh basil.
  7. To make balsamic reduction, simmer balsamic vinegar and brown sugar in a saucepan over medium heat until thickened (about 10-15 minutes).
  8. Drizzle balsamic reduction over the plated chicken before serving.
