  • 11.5 lbs chicken breast or boneless skinless chicken thighs, cut into cubes
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • 1/2 red onion, cut into chunks
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup Primal Kitchen Foods Hawaiian BBQ Sauce
  • 1 tbsp avocado oil
  • Juice of 1 lime
  • Salt to taste
  • Fresh cilantro and white sesame seeds for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine cubed chicken, salt, avocado oil, and pepper to taste.
  3. Add diced bell peppers and red onion to the chicken mixture along with half of the BBQ sauce. Mix until well-coated.
  4. Spread the mixture evenly on the prepared baking sheet.
  5. Bake for about 20 minutes. Remove from the oven and add pineapple chunks evenly over the top. Return to the oven for another 10-20 minutes until chicken reaches an internal temperature of 165°F (75°C).
  6. Squeeze fresh lime juice over the dish before serving and garnish with cilantro and sesame seeds.
