  • 1 lb lean ground beef (or ground turkey)
  • 1/2 cup low-fat cheddar cheese
  • 1/2 cup whole wheat breadcrumbs (or crushed oats)
  • 4 diced jalapeños (seeded)
  • 4 egg whites
  • 6 tbsp fat-free cream cheese
  • Pinch of salt and pepper

Instructions

  1. Preheat oven to 400°F (200°C) and lightly oil a muffin tin.
  2. In a large mixing bowl, combine ground beef, cheddar, breadcrumbs, jalapeños, and egg whites until mixed well.
  3. Fill muffin cups halfway with the mixture. Add half a tablespoon of cream cheese on top of each cup and then cover with more meat mixture until nearly full.
  4. Bake for 20-25 minutes until golden brown and bubbling at the edges.
  5. Allow bites to cool for 5-10 minutes before carefully removing from the tin.
