Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup honey
  • For frosting: 1/4 cup unsalted butter, room temperature
  • 1 1/2 cups powdered sugar
  • 2 tablespoons honey
  • 12 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together 1 ½ cups of all-purpose flour, ½ cup yellow cornmeal, ½ teaspoon baking soda, and ¼ teaspoon salt.
  3. In another bowl, cream together ½ cup unsalted butter and ½ cup sugar until light and fluffy (2-3 minutes). Add in one large egg, 1 teaspoon vanilla extract, and ¼ cup honey; mix until well combined.
  4. Gradually incorporate the dry ingredients into the wet mixture until just combined. Avoid overmixing.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie.
  6. Bake for about 10-12 minutes until golden around the edges but soft in the center. Allow cooling on a wire rack.
  7. For frosting: Beat together ¼ cup unsalted butter with 1 ½ cups powdered sugar and 2 tablespoons honey until smooth; add milk as needed for desired consistency.
  8. Frost cooled cookies generously before serving.
