  • 2 1/2 lb zucchini
  • 3/4 cup extra-virgin olive oil
  • 1 cup diced sweet onion (like Vidalia)
  • 1 1/2 tbsp minced fresh garlic
  • 1 cup heavy cream
  • 3/4 cup finely grated Romano cheese
  • Fresh herbs: basil, oregano, mint
  • Pinch crushed red pepper flakes
  • 1 tsp kosher salt
  • 1 tsp ground black pepper

Instructions

  1. Cook the pasta in salted boiling water until al dente. Reserve some pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Sauté diced onions for about 5 minutes until translucent.
  3. Add crushed red pepper flakes and minced garlic; cook for another 30 seconds until fragrant.
  4. Stir in chopped zucchini and cook for about 8-10 minutes until tender but firm.
  5. Lower heat and mix in heavy cream and Romano cheese; stir until creamy.
  6. Combine cooked pasta with the sauce, adding reserved pasta water as needed for desired consistency.
