  • ¼ cup cornstarch
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons extra virgin olive oil
  • ⅓ cup soy sauce
  • ⅓ cup water
  • ⅓ cup light brown sugar
  • 1 teaspoon sesame oil
  • 2 teaspoons minced garlic
  • ½ yellow onion, diced
  • 2 large jalapeño peppers, sliced
  • Cooked white rice (for serving)
  • Sesame seeds (for garnish)

Instructions

  1. In a large mixing bowl, combine chicken thighs with cornstarch, kosher salt, and black pepper. Toss until evenly coated.
  2. In another bowl, whisk together soy sauce, water, light brown sugar, sesame oil, and minced garlic until well combined.
  3. Heat olive oil in a large nonstick skillet over medium-high heat. Add half of the coated chicken pieces and cook for about 3 minutes on each side until golden brown. Remove from skillet and set aside.
  4. In the same skillet, add diced onion and sliced jalapeños; sauté for about 4–6 minutes until onions are translucent.
  5. Pour the prepared sauce into the skillet with the vegetables; bring to a gentle simmer.
  6. Return the chicken to the skillet; stir to coat everything in the sauce. Cook for an additional 2–3 minutes until heated through.
  7. Serve over cooked white rice and garnish with sesame seeds.
