  • 1 cup Greek yogurt
  • 2 cups cooked rice
  • 2.5 cups tomatoes (diced into 1/2-inch pieces)
  • 2 cups cucumber (diced into 1/2-inch pieces)
  • 4 cups lettuce (torn or chopped)
  • 1 cup red onion (thinly sliced)
  • 1/2 cup feta cheese (crumbled)
  • 1.5 tsp garlic powder
  • 2.5 tsp oregano
  • 2 tsp basil
  • 1.25 tsp salt
  • 1/2 tsp black pepper
  • 3/4 tsp red pepper flakes
  • 1/2 cup cucumber (grated and squeezed of excess liquid)
  • 1.5 tbsp lemon juice (for tzatziki)
  • 1.5 tbsp olive oil (for tzatziki)
  • 1.5 tsp garlic (finely minced)
  • 1/2 tsp salt (for tzatziki)
  • 1 tbsp dill (freshly chopped for best flavor)
  • Optional for serving: fresh parsley (chopped)

Instructions

  1. In a large bowl, combine chicken pieces with olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes. Mix well and marinate for at least 30 minutes.
  2. Prepare the tzatziki by mixing Greek yogurt with grated cucumber (squeezed dry), olive oil, minced garlic, lemon juice, salt, and chopped dill. Chill until ready to use.
  3. Heat olive oil in a skillet over medium-high heat. Add marinated chicken and cook for about 8-10 minutes until golden brown and cooked through.
