- 24 oz baby Dutch yellow potatoes
- 1/2 Tbsp sea salt
- 1/3 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 2 Tbsp fresh thyme leaves
- 1/4 red onion, sliced thin
- 3 Tbsp capers
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 1/2 Tbsp lemon juice
- Zest of 1 lemon
- 3 cloves garlic, grated
- Boil salted water in a large pot. Add quartered potatoes and cook for about 7 minutes until fork-tender. Drain and cool.
- In a mixing bowl, combine mayonnaise, sour cream, lemon juice, garlic, salt, and pepper to create the dressing.
- Toss cooled potatoes with red onion, capers, dill, parsley, thyme, and dressing until evenly coated.
- Squeeze additional lemon juice over the salad before serving.
- Refrigerate for at least one hour before enjoying to enhance flavors.
