  • 24 oz baby Dutch yellow potatoes
  • 1/2 Tbsp sea salt
  • 1/3 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 Tbsp fresh thyme leaves
  • 1/4 red onion, sliced thin
  • 3 Tbsp capers
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 1/2 Tbsp lemon juice
  • Zest of 1 lemon
  • 3 cloves garlic, grated

Instructions

  1. Boil salted water in a large pot. Add quartered potatoes and cook for about 7 minutes until fork-tender. Drain and cool.
  2. In a mixing bowl, combine mayonnaise, sour cream, lemon juice, garlic, salt, and pepper to create the dressing.
  3. Toss cooled potatoes with red onion, capers, dill, parsley, thyme, and dressing until evenly coated.
  4. Squeeze additional lemon juice over the salad before serving.
  5. Refrigerate for at least one hour before enjoying to enhance flavors.
