15 oz. Galbani® Ricotta
1 baguette (cut into ½ inch slices)
2 tablespoons extra virgin olive oil
3 tablespoons lemon zest
2 tablespoons fresh thyme leaves
¼ cup salted pistachios, chopped
3 tablespoons honey
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
Slice the baguette into ½ inch pieces and arrange on a baking sheet. Drizzle with olive oil on both sides.
Bake for 5-7 minutes until golden brown and crunchy.
In a food processor, blend the ricotta until smooth. Transfer to a bowl and season with salt and pepper.
Once the baguette slices are toasted, pipe or spread the whipped ricotta onto each piece.
Top with lemon zest, fresh thyme leaves, chopped pistachios, and drizzle with honey before serving.
