  • 2 tablespoons extra virgin olive oil
  • 150 grams fresh mozzarella
  • 2 tablespoons fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 2 teaspoons lemon juice (1 teaspoon for brine, 1 teaspoon for drizzling)
  • 2 tablespoons grated parmesan cheese
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.
  2. Prepare the dough according to your favorite recipe or use store-bought dough.
  3. In a jar, combine olive oil, water, parsley, garlic, lemon zest, lemon juice, salt, and pepper. Shake well to create the brine.
  4. Shape the dough on parchment paper into a rectangle or circle about 9×13 inches.
  5. Create dimples in the dough with your fingers and pour the brine over it evenly.
