  • 1 (15-ounce) can kidney beans, rinsed and drained
  • 1/4 cup red onion, chopped fine
  • 3/4 cup celery, chopped
  • 1 small cucumber, peeled seeded and chopped
  • 3/4 cup fresh Italian parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 2 tomatoes, chopped fine
  • 1/4 cup nutritional yeast (optional for cheese flavor)
  • 1/4 cup extra-virgin olive oil
  • Juice of 1 1/2 lemons
  • 1 clove garlic, minced
  • 1/2 teaspoon dried Italian seasoning
  • Ground pepper and sea salt to taste

Instructions

  1. Gather all ingredients and prepare them by rinsing the canned beans and chopping vegetables.
  2. In a large mixing bowl, combine garbanzo beans, cannellini beans, kidney beans, red onion, celery, cucumber, parsley, basil, and tomatoes.
  3. In a separate bowl or jar, whisk together olive oil, lemon juice, minced garlic, Italian seasoning, salt, and pepper until well combined.
  4. Drizzle the dressing over the bean mixture and gently toss until everything is coated.
