- 2 cups organic baby spinach
- 2 cups organic mixed leafy greens (including kale & chard)
- 1/2 cup quartered marinated artichoke hearts
- 4 oz. fresh mozzarella cheese marinated with extra virgin olive oil & fresh basil
- 4 oz. assorted olives jubilee (including Calamata, Nicoise, Picholine & Amfissa)
- 1 cup organic grape tomatoes
- 1/2 cup pepperoncini
- 1/2 red onion (thinly sliced)
- 1/4 cup feta cheese (crumbled)
- 4 tbsp canola oil
- 1/4 cup fresh lemon juice
- 1–3 garlic cloves (to taste)
- 1/2 tsp sea salt (to taste)
- 1/4 tsp pepper (freshly cracked, to taste)
- 1 cup water (used during blending)
- 1/3 cup yellow onion (for blending into dressing)
- In a large mixing bowl, layer 2 cups of organic baby spinach and 2 cups of organic mixed leafy greens.
- Add 1/2 cup of quartered marinated artichoke hearts over the greens.
- Sprinkle 4 oz. of fresh mozzarella and 4 oz. of assorted olives on top.
- Add 1 cup of halved grape tomatoes and 1/2 cup of pepperoncini.
- Toss in thinly sliced 1/2 red onion.
- In a blender, combine 1/4 cup feta cheese, 4 tbsp canola oil, 1/4 cup lemon juice, garlic (to taste), sea salt, and pepper to create the dressing.
- Drizzle the dressing over the salad and gently toss until evenly coated.
