Ingredients

  • 2 cups organic baby spinach
  • 2 cups organic mixed leafy greens (including kale & chard)
  • 1/2 cup quartered marinated artichoke hearts
  • 4 oz. fresh mozzarella cheese marinated with extra virgin olive oil & fresh basil
  • 4 oz. assorted olives jubilee (including Calamata, Nicoise, Picholine & Amfissa)
  • 1 cup organic grape tomatoes
  • 1/2 cup pepperoncini
  • 1/2 red onion (thinly sliced)
  • 1/4 cup feta cheese (crumbled)
  • 4 tbsp canola oil
  • 1/4 cup fresh lemon juice
  • 13 garlic cloves (to taste)
  • 1/2 tsp sea salt (to taste)
  • 1/4 tsp pepper (freshly cracked, to taste)
  • 1 cup water (used during blending)
  • 1/3 cup yellow onion (for blending into dressing)

Instructions

  1. In a large mixing bowl, layer 2 cups of organic baby spinach and 2 cups of organic mixed leafy greens.
  2. Add 1/2 cup of quartered marinated artichoke hearts over the greens.
  3. Sprinkle 4 oz. of fresh mozzarella and 4 oz. of assorted olives on top.
  4. Add 1 cup of halved grape tomatoes and 1/2 cup of pepperoncini.
  5. Toss in thinly sliced 1/2 red onion.
  6. In a blender, combine 1/4 cup feta cheese, 4 tbsp canola oil, 1/4 cup lemon juice, garlic (to taste), sea salt, and pepper to create the dressing.
  7. Drizzle the dressing over the salad and gently toss until evenly coated.
