  • ⅔ cup sour cream
  • 3 Tbsp lime juice
  • 2 Tbsp taco seasoning
  • 1 (16-oz) bag tri-color coleslaw mix
  • 1 red bell pepper (diced)
  • 1 (10-oz) can Rotel diced tomatoes and green chiles (drained)
  • 1 (11-oz) can corn kernels (drained)
  • 1 (15-oz) can black beans (drained & rinsed)
  • 1 jalapeño pepper (seeded & finely chopped)
  • ½ cup chopped fresh cilantro
