- 3 tablespoons butter (melted)
- ¼ cup cotija cheese (grated)
- 3 tablespoons mayonnaise
- 3 tablespoons Mexican-style cream
- ½ teaspoon salt
- ¾ teaspoon Tajín spice (divided)
- ½ whole lime (juiced)
- Chopped cilantro (optional for garnish)
- Preheat your grill to medium heat.
- In a mixing bowl, combine mayonnaise, Mexican-style cream, lime juice, salt, paprika, and ½ teaspoon of Tajín spice for the sauce.
- Peel back the husks of the sweet corn and coat each ear with melted butter. Wrap them in aluminum foil.
