  • 4 slices turkey bacon (cooked until crispy)
  • 2 large ears sweet corn (shucked and sliced off cob)
  • 1 teaspoon Tajin seasoning (plus extra for topping)
  • 3 ounces cream cheese (softened)
  • 1/4 cup sour cream (or Greek yogurt)
  • 3 tablespoons mayonnaise
  • 1/2 cup sharp cheddar cheese (shredded)
  • 1/2 teaspoon cumin
  • 3 tablespoons cilantro (finely chopped)
  • 1/4 cup cotija cheese (crumbled)

Instructions

  1. Preheat your oven to 375°F if baking or air fryer to 400°F.
  2. Slice each jalapeño in half lengthwise and remove seeds for less heat.
  3. Cook turkey bacon in a skillet until crispy; set aside.
  4. In the same skillet, sauté sweet corn until golden; sprinkle with Tajin.
  5. In a bowl, mix cream cheese, sour cream, mayonnaise, cheddar cheese, cumin, cilantro, and cooked corn until smooth.
  6. Pipe the mixture into each jalapeño half using a zip-top bag.
  7. Top with crumbled cotija and crispy bacon bits before baking or air frying for about 15 minutes or until golden brown.
