  • 1 cup cold unsalted butter, cubed
  • 4 medium apples, peeled and diced
  • 1/4 cup white sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 5 to 6 tablespoons ice water

Instructions

  1. In a large mixing bowl, combine flour, sugar, and salt. Cut in cold butter until it resembles coarse crumbs.
  2. Gradually add ice water until dough comes together. Wrap in plastic and refrigerate for at least 30 minutes.
  3. Preheat oven to 375°F (190°C).
  4. Roll out chilled dough and cut into circles to fit muffin tin cups. Press into each well.
  5. In another bowl, mix diced apples with sugars, cinnamon, and flour.
  6. Fill each crust with apple mixture and fold over any excess dough.
  7. Brush tops with egg wash or non-dairy milk and sprinkle with sanding sugar if desired.
  8. Bake for 18-20 minutes until golden brown.
