  • ½ cup sparkling grape juice or sparkling apple vinegar
  • ¼ cup whole milk
  • 1 teaspoon vanilla extract
  • ½ cup peach puree (fresh or canned)
  • 1 cup (230 g) unsalted butter, room temperature (for frosting)
  • 34 cups (360–480 g) powdered sugar, sifted
  • 34 tablespoons peach puree (for frosting)
  • 12 tablespoons sparkling grape juice or sparkling apple vinegar (for frosting)
  • Pinch of salt (for frosting)
  • Fresh peach slices
  • Sparkling sugar or granulated sugar, used as decoration

Instructions

  1. Preheat oven to 350°F (175°C) and line muffin pan with cupcake liners.
  2. In one bowl, whisk together flour, baking powder, and salt; set aside.
  3. In another bowl, cream room temperature butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. In a separate bowl, combine sparkling grape juice, whole milk, vanilla extract, and peach puree.
  6. Gradually add dry ingredients to the butter mixture alternating with wet mixture until just combined.
  7. Fill cupcake liners two-thirds full and bake for 18 minutes or until lightly golden.
  8. Cool completely before frosting with peach buttercream made from room temperature butter, powdered sugar, peach puree, and sparkling grape juice.
