Ingredients

Scale
  • 2 cups chopped peaches (fresh, frozen, or canned)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons salted butter (or unsalted with pinch of salt)
  • ½ cup light brown sugar
  • 4 teaspoons cornstarch
  • ½ teaspoon ground cinnamon
  • ½ teaspoon pure vanilla extract
  • 10 egg roll wrappers
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting – optional)

Instructions

  1. In a small saucepan, combine chopped peaches, lemon juice, butter, brown sugar, cornstarch, and cinnamon over medium heat. Stir occasionally until bubbling and thickened (about 10 minutes). Remove from heat and stir in vanilla extract.
  2. Let the filling cool slightly. Lay out an egg roll wrapper at an angle and brush edges with water. Spoon about 2 tablespoons of filling onto the center and fold sides inward before rolling tightly.
  3. Heat vegetable oil in a deep skillet to 350°F (175°C). Fry egg rolls in batches for about 5-6 minutes or until golden brown and crispy. Drain on paper towels and dust with powdered sugar if desired.
