  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 3 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • 1 cup cold unsalted butter (cut into cubes)
  • 1 large egg
  • 6 cups sliced peeled fresh peaches (approx. 78 peaches)
  • ⅓ cup granulated sugar (for filling)
  • 1½ tablespoons cornstarch
  • 12 tablespoons freshly squeezed lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch pan by lining it with parchment paper.
  2. In a large mixing bowl, combine granulated sugar, baking powder, flour, cinnamon, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs. Add the egg and vanilla extract; mix until combined.
  4. Reserve about two cups of dough for topping and press the remaining mixture evenly into the bottom of the prepared pan.
  5. Pre-bake the crust for 10-12 minutes until set but not fully baked.
  6. In another bowl, toss sliced peaches with additional sugar, cornstarch, lemon juice, and cinnamon.
  7. Spread peach mixture over the pre-baked crust and crumble reserved dough on top.
  8. Bake for an additional 30-35 minutes until golden brown and bubbly.
  9. Allow to cool for at least 30 minutes before slicing into squares.
