  • 140 grams (1 cup) all-purpose flour
  • 130 grams (1 cup and 1/3 cup) rolled oats
  • 155 grams (3/4 cup) granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt (optional)
  • 150 g (⅔ cup) unsalted butter, melted and cooled
  • 450 grams (2 cups) peaches, peeled and cut into small pieces
  • 30 grams (2 tablespoons) granulated sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon almond extract

Instructions

  1. Preheat your oven to 350°F (177°C) and grease an 8-inch square baking dish lined with parchment paper.
  2. In a mixing bowl, combine flour, oats, sugar, cinnamon, and salt.
  3. Pour melted butter into the dry mixture until it resembles wet sand. Press two-thirds of this mixture into the bottom of your prepared baking dish.
  4. In another bowl, toss peach pieces with lemon juice, almond extract, sugar, and cornstarch. Spread evenly over the crust.
  5. Sprinkle the remaining oat mixture over the peaches, pressing down lightly.
  6. Bake for 33-35 minutes or until golden brown on top. Allow to cool before slicing.
