  • 2/3 cup packed brown sugar
  • 1/4 teaspoon cinnamon
  • 3 large peaches, peeled and sliced
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 inch baking dish with cooking spray or butter.
  2. In a microwave-safe bowl, melt the salted butter with brown sugar and cinnamon until combined. Spread this mixture evenly in the bottom of the prepared dish.
  3. Arrange the sliced peaches on top of the caramelized mixture.
  4. In another bowl, whisk together flour, baking powder, and salt. Set aside.
  5. In a mixing bowl, beat softened unsalted butter until fluffy; gradually add granulated sugar until well combined. Mix in the egg and vanilla extract.
  6. Alternately add the flour mixture and milk to the butter mixture, beginning and ending with flour; mix until just combined.
  7. Pour the batter over the peach layer in the dish, spreading it evenly.
  8. Bake for 40–45 minutes or until golden brown and a toothpick inserted comes out clean.
  9. Allow to cool for about five minutes before inverting onto a serving plate.
