  • 2 1/2 cups graham cracker crumbs
  • 3/4 cup granulated sugar (divided)
  • 1/2 cup unsalted butter (melted)
  • 2 packages cream cheese (8 ounces each)
  • 2 large eggs
  • 1 teaspoon vanilla extract (divided)
  • 1 cup light brown sugar (packed)
  • 1/2 cup light corn syrup
  • 1/2 cup heavy whipping cream
  • 2 cups chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 13×9 inch baking dish with parchment paper.
  2. In a food processor, combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Pulse until well mixed and press into the bottom of the prepared dish.
  3. In a mixing bowl, beat softened cream cheese with 3/4 cup granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in 1 teaspoon vanilla extract.
  4. Pour the cheesecake batter over the crust and spread evenly.
  5. In a saucepan over medium heat, combine brown sugar, corn syrup, heavy whipping cream, and remaining butter. Stir until boiling; remove from heat and stir in remaining vanilla extract and chopped pecans.
  6. Pour the pecan mixture over the cheesecake layer.
  7. Bake for about 35 minutes until edges are set but center is slightly jiggly. Let cool completely on a wire rack before refrigerating for at least four hours or overnight.
  8. Slice into bars and serve.
