  • 4 ripe kiwis
  • 1/4 cup shredded coconut
  • 810 fresh mint leaves
  • Juice and zest of 2 limes
  • 2 tablespoons honey

Instructions

  1. Toast the shredded coconut in a skillet over medium-low heat for 3-5 minutes until golden brown. Set aside.
  2. Peel and cube the pineapple into bite-sized pieces, then place in a large bowl.
  3. Slice kiwis in half and scoop out the flesh; cut into similar-sized chunks as the pineapple. Add to the bowl.
  4. Roll and slice mint leaves into thin ribbons; add to the fruit mixture.
  5. In a separate bowl, whisk together lime zest, lime juice, and honey until well combined.
  6. Pour the honey lime dressing over the fruit and gently toss to coat everything evenly.
  7. Chill for at least 30 minutes before serving and top with toasted coconut just before serving.
