  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup shelled pistachios, roughly chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, whisk together melted butter and brown sugar until glossy. Add in the egg and vanilla extract, mixing until smooth.
  3. In another bowl, combine flour, baking powder, and salt. Gradually fold this mixture into the wet ingredients until just combined.
  4. Gently stir in the chopped pistachios.
  5. Pour the batter into the prepared pan and smooth out the top.
  6. Bake for about 22 minutes, checking for a golden hue and cracks on top. A toothpick inserted should come out clean from the edges.
  7. Allow to cool before slicing into squares.
