  • 4 ½ cups cold cooked jasmine rice
  • ½ lb skinless boneless chicken thighs, thinly sliced
  • 1.5 cups frozen peas and carrots
  • 3 large eggs, beaten
  • 1 small shallot, finely diced
  • 3 garlic cloves, minced
  • 4 teaspoons vegetable oil
  • 3 teaspoons soy sauce (regular and dark)
  • 2 teaspoons sesame oil
  • 1 teaspoon chicken bouillon powder

Instructions

  1. Marinate sliced chicken in soy sauce, apple vinegar, and cornstarch for 5–10 minutes.
  2. Mix together soy sauces, sesame oil, and chicken bouillon powder in a bowl; set aside.
  3. Heat 1 teaspoon vegetable oil in a large pan or wok over medium-high heat. Cook marinated chicken until fully cooked (4–5 minutes). Remove from the pan.
  4. In the same pan, add another teaspoon of oil; sauté shallots and garlic for about 10 seconds until fragrant.
  5. Push the mixture to one side of the pan. Add another teaspoon of oil in the empty space; pour in beaten eggs and scramble gently until just set.
  6. Combine everything in the pan; add cold jasmine rice and stir-fry thoroughly for about 2–3 minutes.
  7. Pour in the sauce mixture around the edges of the pan; toss well to coat every grain of rice evenly. Drizzle with sesame oil before serving.
