6–8 ripe large peaches

1 cup water (for simple syrup)
4–6 cups cold water (for dilution)

Instructions
Prepare the peach puree by combining diced peaches, sugar, water, and lemon juice in a saucepan over medium-low heat. Simmer for 10–15 minutes until softened.
Mash the mixture until smooth and strain through a fine-mesh sieve into a bowl. Allow it to cool.
For the simple syrup, dissolve granulated sugar in water over medium heat until fully dissolved; let it cool.
Juice lemons until you have 1 ½ cups of fresh juice, straining out any seeds or pulp.
In a pitcher, combine cooled simple syrup with lemon juice and mix well.
Add chilled peach puree and stir gently to combine; then incorporate 4–6 cups of cold water based on your taste preference.
Chill in the refrigerator for at least 30 minutes before serving over ice with garnishes.
