  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • ½ cup honey
  • 1 large egg
  • 1 tbsp vanilla extract
  • 1 tsp coarse sea salt
  • 1 tsp baking soda
  • 2½ cups all-purpose flour
  • 1 cup chopped roasted pistachios

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the salted butter in a saucepan over medium heat until golden and nutty; let cool.
  3. In a large mixing bowl, combine the browned butter with brown sugar and granulated sugar; mix until creamy.
  4. Add the egg, vanilla extract, coarse sea salt, and baking soda; mix well.
  5. Gradually incorporate the flour until just combined.
  6. Fold in chopped roasted pistachios.
  7. Scoop tablespoon-sized balls of dough onto lined baking sheets, spacing them two inches apart.
