  • 3 cans (11 ounces each) white shoe peg corn, well drained
  • 1 medium cucumber, peeled, seeded, and chopped
  • 1 (14 ounce) can petite diced tomatoes, well drained
  • 23 tablespoons pimentos or chopped roasted red peppers
  • 6 scallions (white and green parts), chopped
  • 2/3 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon granulated sugar

Instructions

  1. Chop the cucumber and scallions into bite-sized pieces.
  2. In a large mixing bowl, combine shoe peg corn, drained tomatoes, and pimentos (or roasted red peppers).
