Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour four mini loaf pans.
  2. In a large mixing bowl, whisk together the egg, white sugar, and brown sugar until combined. Stir in the pumpkin puree, oil, and vanilla extract until smooth.
  3. In another bowl, mix the flour, baking powder, baking soda, pumpkin pie spice, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until just combined to avoid overmixing.
  5. Pour half of the batter into each prepared loaf pan. Sprinkle half of the cinnamon-sugar mixture on top before adding the remaining batter and finishing with any leftover cinnamon-sugar.
  6. Use a knife to gently swirl through the batter to create a marbled effect.
  7. Bake for about 20 minutes or until a toothpick inserted comes out clean. Allow cooling for five minutes before transferring to wire racks.
