  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 onion, diced
  • 1/4 cup water
  • 1 tablespoon olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon oregano
  • 1/4 teaspoon allspice
  • 1 teaspoon lemon pepper
  • 1 cup fat-free plain Greek yogurt
  • 2 cloves garlic (for tzatziki), minced
  • 1/2 cup grated cucumber
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Spray the slow cooker with nonstick cooking spray. Place the chicken breasts inside.
  2. In a mixing bowl, combine minced garlic, lemon juice, diced onion, water, olive oil, apple cider vinegar, oregano, allspice, and lemon pepper. Mix well and pour over the chicken.
  3. Cover and cook on HIGH for 3-4 hours or LOW for 6-8 hours until the chicken is tender.
  4. While the chicken cooks, prepare the tzatziki: mix Greek yogurt with minced garlic, grated cucumber (squeezed of excess moisture), and parsley in a bowl. Add salt to taste and refrigerate.
  5. Once cooked, shred the chicken in the slow cooker using two forks until it's fully pulled apart.
