  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground allspice
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup apple cider
  • 1 tsp vanilla extract
  • For crust: 1/4 cup granulated sugar, 1 tsp ground cinnamon, 2 tbsp melted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and spices until well combined.
  3. In a large bowl, mix melted butter with granulated sugar and brown sugar until smooth. Add eggs one at a time, then stir in apple cider and vanilla extract.
  4. Gradually fold in dry ingredients into wet mixture until just combined; do not overmix.
  5. Pour batter into the prepared loaf pan and smooth the top. Bake for about 45–50 minutes or until a toothpick inserted comes out clean.
  6. While the loaf bakes, prepare the topping by mixing additional granulated sugar with cinnamon. Brush the warm loaf with melted butter and sprinkle the topping over it after removing from oven.
