  • 1 cup unsalted butter, at room temperature
  • 3 large eggs, at room temperature
  • 1 ¾ cups cake flour (or all-purpose flour)
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp allspice
  • ½ tsp freshly grated nutmeg
  • ¼ tsp ground cloves
  • ½ cup cultured buttermilk
  • 2 cups diced peaches
  • 1 tsp coarse sparkling sugar (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×5 loaf pan by buttering it and lining it with parchment paper.
  2. In a mixing bowl, cream together the dark brown sugar and unsalted butter until light and fluffy.
  3. Beat in the eggs one at a time until fully incorporated.
  4. In another bowl, whisk together the cake flour, baking powder, salt, cinnamon, allspice, nutmeg, and cloves.
  5. Gradually add the dry ingredients to the wet mixture alternating with buttermilk until just combined.
  6. Gently fold in the diced peaches.
  7. Pour the batter into the prepared loaf pan and sprinkle with sparkling sugar if desired.
  8. Bake for 50–55 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
