  • 3 tablespoons sugar
  • 10 ounces arugula greens
  • 8 ounces strawberries (hulled and quartered)
  • 1 avocado (chopped)
  • ⅓ cup roasted salted pistachios (chopped)
  • 3 tablespoons sparkling grape juice vinegar
  • ½ lemon (juiced)
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 1 garlic clove (freshly grated)
  • Pinch of kosher salt and pepper
  • ½ cup olive oil

Instructions

  1. Toast the sliced almonds in a nonstick skillet over medium heat with sugar until golden brown, about 6 to 8 minutes. Remove from heat and let cool.
  2. In a large mixing bowl, gently toss arugula with a pinch of salt and pepper.
  3. Add strawberries and chopped avocado to the bowl with arugula.
  4. Crumble goat cheese over the salad and add the chopped pistachios.
  5. For the dressing, whisk together sparkling grape juice vinegar, lemon juice, honey, Dijon mustard, garlic, salt, and pepper in a separate bowl. Gradually whisk in olive oil until emulsified.
  6. Drizzle the dressing over the salad ingredients and gently toss to combine.
