  • 1 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup strawberry jam or preserves
  • Sprinkles for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a large bowl, cream together softened butter, granulated sugar, and powdered sugar until fluffy. Add eggs one at a time, mixing well after each addition; then stir in vanilla extract.
  4. Gradually mix in the dry ingredients until just combined to form a soft dough.
  5. Scoop out tablespoon-sized portions of dough and flatten into discs. Create a well in the center of each disc for jam filling.
  6. Spoon about one teaspoon of strawberry jam into each well and cover with another disc, sealing edges by crimping with a fork.
  7. Place cookies on prepared baking sheets about two inches apart and bake for 10-12 minutes until edges are lightly golden.
  8. Cool on wire racks before drizzling with icing made from powdered sugar and milk; top with sprinkles.
