  • 16 oz short pasta (rigatoni or rotini)
  • 3 oz baby spinach
  • 10 oz cherry tomatoes (halved)
  • 8.5 oz sun-dried tomatoes in oil (drained)
  • ½ red onion (small diced)
  • ½ cup shredded parmesan cheese
  • 8 oz mozzarella pearls
  • ⅓ cup chopped basil
  • ⅓ cup extra virgin olive oil
  • ⅓ cup reserved oil from sun-dried tomatoes
  • 2 tbsp balsamic vinegar
  • 2 garlic cloves (minced)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted boiling water until al dente, according to package instructions. Drain without rinsing.
  2. In a large mixing bowl, combine warm pasta with baby spinach. Let sit for about 15 minutes to wilt spinach.
  3. Gently fold in cherry tomatoes, sun-dried tomatoes, red onion, basil, mozzarella pearls, and parmesan cheese.
  4. In a separate bowl, whisk together olive oil, reserved sun-dried tomato oil, balsamic vinegar, garlic, Italian seasoning, salt, and pepper.
  5. Pour three-quarters of the dressing over the salad mixture and toss gently to coat.
  6. Chill in the refrigerator for at least 30 minutes before serving.
  7. Drizzle remaining dressing before serving.
