  • 1 lb shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 tablespoon olive oil (or sesame oil)
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • ⅓ cup sweet chili sauce
  • 2 tablespoons soy sauce (or tamari)
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 2 teaspoons water
  • Sesame seeds and green onions for garnish
  • Lime wedges for serving

Instructions

  1. Prepare all ingredients: pat shrimp dry, season with salt and pepper, trim asparagus, mince garlic, and grate ginger.
  2. Mix sweet chili sauce, soy sauce (or tamari), honey, rice vinegar, and the cornstarch slurry in a bowl.
  3. Heat oil in a large pan over medium-high heat. Stir-fry asparagus for about 2–3 minutes until just tender. Remove from pan.
  4. In the same pan, add shrimp along with garlic and ginger; cook for about 2 minutes until shrimp turns pink.
  5. Pour in the sweet chili sauce mixture; simmer for 1–2 minutes until thickened.
  6. Add asparagus back to the pan; stir gently to coat everything in the sauce.
  7. Garnish with sesame seeds and green onions before serving with lime wedges.
