  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 cup pineapple juice
  • 1 can (8 oz) pineapple chunks, drained
  • ½ cup soy sauce
  • ½ cup brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon cornstarch + 2 tablespoons water
  • 1 red bell pepper, thinly sliced
  • ½ teaspoon ground ginger
  • Salt & pepper to taste
  • Cooked rice for serving
  • Green onions & sesame seeds for garnish

Instructions

  1. Season chicken with salt and pepper on both sides and place in the slow cooker.
  2. In a mixing bowl, whisk together pineapple juice, soy sauce, brown sugar, garlic, and ginger until smooth.
  3. Pour the sauce over the chicken in the slow cooker. Layer pineapple chunks and sliced bell peppers on top.
  4. Cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
  5. Remove chicken and mix cornstarch with water in a bowl; stir into cooking liquid in the slow cooker.
  6. Cover and cook on high for an additional 15 minutes until the sauce thickens.
  7. Return chicken to the pot to coat in sauce before serving over rice. Garnish with green onions and sesame seeds.
