  • pounds boneless chicken thighs or breasts, cut into bite-size pieces
  • 1 tablespoon olive oil or sesame oil
  • 1 ripe mango, peeled and chopped (or ¾ cup mango purée)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar or lime juice
  • 2 garlic cloves, minced
  • ½ teaspoon fresh grated ginger
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • ½ teaspoon chili flakes (optional)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

Instructions

  1. Create the mango glaze by blending chopped mango until smooth. Transfer to a saucepan with soy sauce, honey/maple syrup, rice vinegar/lime juice, minced garlic, and ginger.
  2. Simmer on medium heat for about 5 minutes. Stir in cornstarch mixed with water to thicken the glaze.
  3. Season chicken pieces with salt, pepper, and garlic powder. Heat oil in a skillet over medium-high heat and cook the chicken until golden brown (6-8 minutes).
  4. Reduce heat to low and pour the mango glaze over the chicken. Toss gently and let simmer for another 2-3 minutes.
  5. Serve hot over steamed jasmine rice or noodles and garnish with sliced green onions and sesame seeds.
