  • 8 boneless skinless chicken thighs
  • 1 cup low sodium soy sauce
  • 1 cup brown sugar
  • 1/4 cup rice vinegar
  • 1/2 cup water
  • 45 large cloves garlic, minced
  • 3 teaspoons freshly grated ginger
  • 2 tablespoons cornstarch
  • 3 green onions, chopped for garnish

Instructions

  1. In a large bowl, whisk together soy sauce, brown sugar, rice vinegar, garlic, ginger, and water until well combined.
  2. Pour half of the marinade over the chicken thighs in a resealable bag or another bowl and let marinate for at least 2 hours (overnight preferred).
  3. Meanwhile, pour the remaining marinade into a pot; add cornstarch and bring to a boil over medium heat until thickened (about 3-4 minutes). Set aside.
  4. Preheat your grill or cast iron pan over high heat. Grill chicken thighs for about 6–7 minutes on each side until cooked through.
  5. Brush the thickened marinade onto the chicken during the last few minutes of cooking.
  6. Allow chicken to rest for 10 minutes before slicing and serving with garnish.
