½ cup creamy peanut butter
1 cup unsweetened full-fat coconut milk
2 tablespoons fresh lime juice
2 tablespoons soy sauce
1 ½ tablespoons brown sugar
1 teaspoon ground ginger
1 tablespoon minced fresh garlic
½ teaspoon crushed red pepper flakes
2 pounds boneless, skinless chicken thighs

Instructions
In a mixing bowl, whisk together the peanut butter, coconut milk, lime juice, soy sauce, brown sugar, ginger, garlic, and red pepper flakes until smooth. Reserve one cup of the sauce.
Coat the chicken thighs in the remaining sauce and marinate for at least 30 minutes (or up to overnight).
