  • 1/2 cup panko breadcrumbs

  • 1/4 cup chopped green onions
  • 3 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon gochujang
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • Spicy mayo dip: 1/2 cup mayonnaise + sriracha

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, green onions, garlic, ginger, soy sauce, sesame oil, gochujang, brown sugar, and rice vinegar. Mix until just combined.
  2. Shape into 1-inch meatballs and place on a parchment-lined tray.
  3. In a skillet over medium-high heat, sear meatballs until golden brown (about 8 minutes). Transfer to a baking dish.
  4. For the glaze, whisk together soy sauce, brown sugar, rice vinegar, and gochujang; pour over meatballs.
  5. Bake at 375°F (190°C) for 15-20 minutes until cooked through.
  6. For the spicy mayo dip: mix mayonnaise with sriracha to taste; chill while meatballs bake.
